Heat 1 teaspoon olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, sauté until soft. Add the ground beef, cooking until browned. Stir in paprika, Italian seasoning, salt, pepper, and crushed tomatoes. Simmer for 5 minutes until the mixture thickens slightly. Remove from heat.
Prepare the Potato Layer:
Toss the thinly sliced potatoes in 1 tablespoon of olive oil, seasoning with salt and pepper.
Assemble the Casserole:
Preheat your oven to 375°F (190°C). Grease a baking dish. Layer half of the sliced potatoes at the bottom. Spread the beef mixture evenly over the potatoes. Layer the remaining potatoes on top.
Bake:
Cover the dish with foil and bake for 40 minutes. Remove the foil, sprinkle the mozzarella cheese over the top, and bake uncovered for another 10–15 minutes, until the cheese is golden and bubbly.
Serve:
Let it rest for 5 minutes before slicing. Garnish with chopped fresh parsley if desired.
