Preheat your oven to 200°C (400°F).
Steam or boil the cauliflower florets until tender but still slightly firm, about 5–7 minutes. Drain well.
In a large mixing bowl, combine sour cream, mayonnaise, cheddar cheese, garlic powder, salt, and pepper.
Add the drained cauliflower to the mixture and gently stir to coat.
Transfer the cauliflower mixture to a greased baking dish.
Sprinkle additional cheese on top.
Bake for 20–25 minutes, or until golden and bubbly.
Garnish with chopped parsley before serving, if desired.
