Ingredients:
24 fresh oysters, opened 🦪
150 ml Champagne 🥂
100 ml liquid fresh cream
50 g soft butter
How to make:
Preheat your oven to 180°C (350°F).
Carefully open the oysters and collect their juice. Set the oyster meat aside.
In a saucepan, melt the butter over low heat.
Add the oyster juice, Champagne, and fresh cream to the butter and simmer gently for about 5 minutes.
Place the oysters back in their shells or in small ovenproof dishes.
Spoon the sauce generously over the oysters.
Bake in the oven for about 8–10 minutes, just until lightly gratinated.
Serve immediately, hot and bubbling.
