1. Prep the Ingredients:
Start by soaking the dates in cold water for about 15 minutes to soften them. This will make it easier to blend them into a smooth paste. While the dates soak, chop your nuts into smaller pieces. If you have a food processor, you can pulse them for an even texture.
2. Blend the Nuts:
Once the nuts are prepared, pulse them in a food processor until they form a rough mixture with some chunks for texture. It’s important not to over-process, as we want some variety in the bar’s texture.
3. Prepare the Date Paste:
After the dates have softened, drain them and place them in the food processor. Process until the dates form a sticky paste. This will act as the binder for the energy bars.
4. Combine the Ingredients:
In a large bowl, mix together the chopped nuts and date paste. Use your hands or a spoon to combine them into a sticky mixture. If the mixture seems too dry, you can add a little bit of water or extra date paste to achieve the right consistency.
