Set your oven to 180°C (350°F) and line a small baking dish (about 8x8 inches) with parchment paper.
Mix the Dry Ingredients:
In a large bowl, combine the oats, chopped apples, raisins, cinnamon, salt, and baking powder.
Add the Wet Ingredients:
In a separate bowl, mix the honey (or maple syrup), melted coconut oil, and vanilla extract. Pour this mixture over the dry ingredients and stir well until everything is evenly coated.
Bake the Bars:
Spread the mixture evenly into the prepared baking dish. Press down firmly to compact the bars. Bake for 25–30 minutes, or until the edges are golden and the center is set.
Cool and Slice:
Allow the bars to cool completely in the pan before slicing into squares or rectangles.
