Drain the tofu and gently press it to remove excess water. Crumble it into small pieces with your hands or a fork.
2️⃣ Cook the Veggies:
In a large skillet, heat the olive oil over medium heat. Sauté the onion and bell pepper for 3–4 minutes until softened. Add the garlic and cook for another 30 seconds.
3️⃣ Add the Tofu:
Toss the crumbled tofu into the skillet. Sprinkle with turmeric, paprika, nutritional yeast, salt, and pepper. Stir well to coat the tofu with the spices.
4️⃣ Wilt the Spinach:
Add the chopped spinach and cook for 2–3 more minutes until the spinach is wilted and everything is heated through.
5️⃣ Serve:
Plate your scramble and top with avocado, fresh herbs, or a drizzle of hot sauce for extra flavor.
