In a bowl, combine the cooked tuna, chopped olives, diced shallot, chives, lemon juice, and spreadable cheese. Mix well until creamy and fully blended.

Unroll the puff pastry on a lightly floured surface. Cut it into even squares (about 2-3 inches each).

Place a small spoonful of the tuna filling in the center of each pastry square. Fold into a triangle or envelope shape, and press the edges to seal tightly (use a fork for a decorative touch).
