Prepare the Pork Chops: Season pork chops generously with salt and pepper on both sides.
Sear the Meat: Heat olive oil in a skillet over medium-high heat. Sear the pork chops for 3–4 minutes per side until golden brown. Remove and set aside.
Make the Sauce: In the same skillet, add balsamic vinegar, apricot preserves, Dijon mustard, and garlic. Stir and simmer for about 2–3 minutes until slightly thickened.
Add the Peaches: Stir in the peach slices and return the pork chops to the skillet. Spoon the sauce over the pork chops.
Simmer: Reduce heat to low, cover, and cook for 5–7 minutes, or until pork chops are cooked through (internal temp of 145°F / 63°C).
Finish with Cheese: Sprinkle crumbled blue cheese over the pork chops just before serving. Garnish with fresh thyme if desired.
