In a large bowl, combine the ground meat, chopped nuts, breadcrumbs, egg, garlic, onion, salt, pepper, and herbs if using. Mix until everything is well incorporated.
Prepare the Pork Tenderloin:
Butterfly the pork tenderloin by slicing it open lengthwise without cutting all the way through. Open it like a book and gently flatten it with a meat mallet to create an even surface.
Stuff the Tenderloin:
Spread the stuffing mixture evenly over the pork. Roll it up tightly and secure it with kitchen twine or toothpicks to hold its shape.
Cook the Tenderloin:
Preheat your oven to 180°C (350°F). In a hot pan, sear the stuffed tenderloin on all sides until golden brown. Transfer to a baking dish and roast for about 45–55 minutes, or until the internal temperature reaches 70°C (160°F).
Rest and Slice:
Let the tenderloin rest for 10 minutes before slicing. This ensures the juices redistribute and the meat stays tender.
