Boil the potatoes until tender. Drain and mash them with butter, dill, salt, smoked paprika, black pepper, and oregano. Set aside to cool slightly.
Cook the Beef Filling:
In a large skillet, sauté the onion and garlic until fragrant.
Add the ground beef and cook until browned.
Stir in the red bell pepper, diced tomato, tomato paste, and parsley. Cook until the mixture thickens slightly. Season to taste.
Assemble the Nests:
Preheat the oven to 375°F (190°C).
Line a baking tray with parchment paper.
Scoop portions of mashed potato onto the tray and shape into nests using the back of a spoon.
Fill the center of each nest with the beef mixture.
Sprinkle shredded mozzarella on top.
Bake:
Bake for 15–20 minutes, or until the cheese is melted and slightly golden.
Serve:
Garnish with extra parsley if desired and serve warm!
