Sicilian Whole Orange Cake: A Burst of Sunshine in Every Slice

Heat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

Prepare the Orange:
Cut the whole orange into chunks (peel included), removing any seeds if necessary. Blend the pieces in a food processor until smooth but slightly textured.

Mix Wet Ingredients:
In a large bowl, beat the eggs and sugar together until light and fluffy. Add the blended orange and the olive oil, mixing until well combined.

Combine Dry Ingredients:
In a separate bowl, whisk together the flour, baking powder, and salt.

Combine Everything:
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.

Bake:
Pour the batter into the prepared pan. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve:
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar if desired.
