Refreshing Carrot, Pineapple, and Walnut Gelatin: A Nutrient-Packed Treat

Bloom the Gelatin: In a small bowl, combine the gelatin with 1/4 cup of cold water. Let it sit for 5 minutes to soften.

Dissolve the Gelatin: Gently heat the bloomed gelatin either in the microwave or over a double boiler until fully dissolved. Set aside.

Prepare the Gelatin Base: In a medium saucepan, heat the carrot juice, water, and sugar over medium heat. Stir occasionally until the sugar dissolves completely without bringing it to a boil.

Incorporate the Gelatin: Remove the saucepan from the heat. Add the dissolved gelatin and mix well. If a creamier dessert is desired, stir in the evaporated milk until smooth.

Add the Extras: Let the mixture cool for about 10–15 minutes at room temperature. Then fold in the pineapple chunks and toasted walnuts gently to distribute evenly.

Mold and Chill: Pour the mixture into a gelatin mold or individual serving containers. Refrigerate for at least 4 hours, or until set.

Unmold and Serve: To unmold easily, run a knife along the edges and briefly dip the mold in warm water. Garnish with mint leaves or slices of carrot and pineapple if desired.
