Mediterranean Salmon Patties: A Crispy, Herb-Packed Delight You’ll Crave

In a large bowl, combine the flaked salmon, spinach, red onion, feta cheese, breadcrumbs, parsley, dill, garlic, eggs, and lemon juice. Season with salt and pepper. Mix gently until just combined.

Shape the Patties:
Form the mixture into small patties, about the size of your palm. You should get around 8 patties.

Cook to Perfection:
Heat a little olive oil in a nonstick skillet over medium heat. Cook the patties for 3–4 minutes on each side, or until golden brown and crispy.

Serve:
Remove from the pan and let them rest on a paper towel to absorb any excess oil before serving.
