Low-Carb Cheesy Cauliflower and Chicken Bake: Comfort Food Without the Guilt

Preheat your oven to 200°C (400°F). Toss the cauliflower florets with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20 minutes, until slightly golden and tender.

Assemble the Casserole:
In a large mixing bowl, combine the roasted cauliflower, shredded chicken, mozzarella, Parmesan, heavy cream, minced garlic, and paprika. Mix gently until everything is evenly coated.

Bake:
Transfer the mixture to a greased baking dish. Sprinkle a little extra cheese on top if desired. Bake for 20–25 minutes, until the casserole is bubbling and golden on top.

Garnish and Serve:
Sprinkle with fresh parsley before serving for a touch of color and freshness.
