Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper.
Mix Dry Ingredients:
In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
Cream Butter and Sugar:
In a large bowl, beat the softened butter and sugar together until light and fluffy (about 2–3 minutes).
Add Egg and Lemon:
Beat in the egg, lemon juice, and lemon zest until fully combined.
Combine Wet and Dry:
Gradually add the dry ingredients to the wet mixture, stirring until just combined (don't overmix).
Form Cookies:
Scoop dough into 1-inch balls.
(Optional) Roll the balls in granulated sugar for a sweet, crackly exterior.
Place them about 2 inches apart on the prepared baking sheet.
Bake:
Bake for 8–10 minutes, until the edges are lightly golden but the centers still look soft.
Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
