Place the chocolate cookies in a food processor and pulse until finely crushed. If you don’t have a food processor, place them in a ziplock bag and crush with a rolling pin.
Mix with Cream Cheese:
In a large bowl, combine the cookie crumbs with the softened cream cheese. Mix thoroughly until a uniform, sticky dough forms.
Shape the Truffles:
Scoop small amounts of the mixture and roll into bite-sized balls with your hands.
Coat the Truffles:
Roll each ball in the cocoa powder until evenly coated. For extra flair, you can also dip some in melted chocolate or roll them in other toppings.
Chill Before Serving:
Place the truffles on a lined tray and refrigerate for at least 1 hour to firm up before serving.
