Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper or lightly grease it.
2. Season the Wedges:
In a large mixing bowl, combine olive oil, minced garlic, paprika, oregano, garlic powder, salt, and pepper.
Add the potato wedges and toss thoroughly to coat each piece evenly.
3. Add Parmesan Magic:
Sprinkle half of the Parmesan cheese into the bowl and toss again.
Arrange the potato wedges skin-side down on the prepared baking sheet.
Sprinkle the remaining Parmesan over the top of the potatoes.
4. Bake to Crispy Goodness:
Bake for 35–40 minutes, flipping once halfway through, until the wedges are golden, crisp, and cooked through.
Broil for an extra 2–3 minutes at the end if you want an extra-crispy finish.
5. Serve:
Garnish with chopped fresh parsley and a little extra Parmesan, if desired. Serve immediately with your favorite dipping sauce!
