Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper or lightly grease it.
Toss the Vegetables:
In a large bowl, combine the diced potatoes, sliced carrots, and zucchinis. Add the olive oil, minced garlic, thyme, rosemary, salt, and pepper. Toss until all the vegetables are evenly coated.
Arrange and Roast:
Spread the vegetables in a single layer on the prepared baking sheet. Roast for about 25–30 minutes, tossing halfway through, until the veggies are tender and golden brown around the edges.
