Preheat your oven to 375°F (190°C) and lightly grease a muffin tray or line with paper cases.
In a large bowl, combine the grated zucchini, diced red capsicum, and grated cheese.
Beat the eggs in a small bowl and add them to the zucchini mixture. Stir until everything is evenly combined.
Spoon the mixture into the prepared muffin cups, filling each about 3/4 full.
Bake for 20–25 minutes, or until the muffins are golden and a toothpick inserted in the center comes out clean.
Let the muffins cool slightly before removing them from the tray. Serve warm or at room temperature!
