Apple Pie Enchiladas: A Sweet Twist on a Classic Favorite

Set your oven to 350°F (175°C).

Fill and Roll:
Spoon about ⅓ cup of apple pie filling onto each tortilla. Roll up the tortillas tightly and place them seam-side down in a greased baking dish.

Make the Sauce:
In a small saucepan, combine the brown sugar, granulated sugar, water, butter, and cinnamon. Bring to a boil, stirring frequently. Let it simmer for 3–4 minutes until slightly thickened.

Pour Over the Enchiladas:
Evenly pour the warm sauce over the rolled tortillas in the baking dish.

Bake:
Cover the dish with foil and bake for about 20 minutes. Remove the foil and bake for an additional 10 minutes, until golden and bubbling.

Serve:
Let them cool slightly before serving. Top with whipped cream, ice cream, or an extra drizzle of caramel sauce for ultimate indulgence!
