Preheat your oven to 375°F (190°C).
Use a sharp knife to carefully cut a pocket into the side of each chicken breast, making sure not to slice all the way through. Season each chicken breast inside and out with salt, pepper, garlic powder, and paprika.
2. Make the Stuffing:
In a bowl, combine chopped spinach, cream cheese, mozzarella, Parmesan, and minced garlic. Mix until well blended and creamy.
3. Stuff the Chicken:
Spoon the spinach and cheese mixture evenly into each chicken breast pocket. Secure the openings with toothpicks if needed to keep the filling inside during baking.
4. Sear and Bake:
Heat the olive oil in an ovenproof skillet over medium-high heat. Sear the stuffed chicken breasts for about 2-3 minutes on each side until golden brown.
Transfer the skillet to the preheated oven and bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
