Stuffed Salmon with Spinach and Cheese

1. Preheat the Oven:
Preheat your oven to 375°F (190°C) and line a baking dish with parchment paper.

2. Prepare the Filling:
In a bowl, combine sautéed spinach, cream cheese, mozzarella cheese, minced garlic, and season with salt and pepper. Mix until well combined.

3. Stuff the Salmon:
Carefully cut a pocket into each salmon fillet. Stuff each fillet with the spinach mixture, pressing gently to ensure the filling stays inside. Place the stuffed fillets into the prepared baking dish.

4. Sear the Salmon:
Heat olive oil in a skillet over medium-high heat. Once hot, sear the salmon for 2-3 minutes per side until golden brown. Then transfer the seared salmon to the oven and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
