Roasted Beet and Citrus Salad with Feta

Roast the Beets: Preheat the oven to 400°F (200°C). Wrap the beets in foil and roast them on a baking sheet for 45–60 minutes, or until they are fork-tender. Let them cool, then peel and slice.

Prepare the Salad Base: Arrange the mixed greens on a serving platter or in a large bowl.

Layer the Ingredients: Layer the roasted beet slices, orange rounds, grapefruit segments, and red onion over the greens.

Add Feta and Nuts (Optional): Sprinkle crumbled feta cheese over the salad, and for an extra crunch, add chopped pistachios or walnuts if desired.

Drizzle and Season: Drizzle the olive oil and balsamic glaze over the salad, and season with salt and black pepper to taste.
