One-Pan Taco Zucchini Skillet

Cook the Vegetables and Beef:
Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic; sauté for 2-3 minutes until fragrant.
Add ground beef to the skillet and cook until browned, breaking it up with a spoon. Drain excess fat if needed.

Add Vegetables and Seasoning:
Stir in the diced zucchini and chopped bell peppers. Cook for 5-6 minutes, stirring occasionally, until the vegetables are tender.
Add taco seasoning and water to the skillet. Stir well to combine and let simmer for 3-4 minutes.

Melt the Cheese:
Sprinkle shredded cheddar cheese over the top of the mixture. Cover the skillet and let the cheese melt, about 2 minutes.

Garnish and Serve:
Remove from heat and garnish with chopped cilantro. Add optional toppings such as diced avocado, sour cream (or Greek yogurt), and sliced jalapeños for extra flavor.
