Push the shrimp to one side of the wok, drizzle more oil on the other side, and crack the eggs into the pan. Let them sit for a few seconds, then scramble them into small pieces. Add the chilies and season with salt and pepper to taste.
Add the Rice:
Next, add the cooked rice to the wok and pour the sauce mixture over the rice. Increase the heat and stir-fry for about 2 minutes or until the sauce is well combined with the other ingredients.
Finish the Dish:
Add the spring onions and stir everything together for 1-2 minutes. Transfer to a serving plate and garnish with cucumber, lime wedges, and cilantro.
Note: You can use regular soy sauce instead of fish sauce if preferred.
