Prepare the Sauce:
In a small bowl, combine fish sauce, light soy sauce, and sugar. Whisk well until the sugar is dissolved. (You can heat it in the microwave for 4-5 seconds to help dissolve the sugar.)
Cook the Shrimp:
Heat a large wok or pan over medium heat, drizzle with oil, and sauté the shallots and garlic for a few seconds until fragrant. Add the shrimp and cook for 1-2 minutes.
