Hearty Beef and Bean Pasta in Rich Red Wine Sauce

Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Drain and set aside.

Sauté aromatics: In a large skillet, heat olive oil over medium heat. Add the chopped shallot and cook until softened, about 2–3 minutes. Stir in the minced garlic.

Brown the beef: Add the ground beef to the skillet. Cook until browned, breaking it apart with a spoon as it cooks. Season with salt, pepper, and red pepper flakes if using.

Deglaze with wine: Pour in the red wine, scraping up any browned bits from the pan. Let it simmer for 2–3 minutes to slightly reduce.

Add beans and sauce: Stir in the beans, crushed tomatoes, oregano, and basil. Let the sauce simmer gently for about 10 minutes, allowing the flavors to blend.

Toss with pasta: Add the cooked pasta to the sauce and toss until everything is coated and heated through.

Serve: Garnish with chopped parsley and Parmesan if desired. Serve warm and enjoy!
