Ginger Sweet Potato Coconut Soup with Lentils and Kale

Ingredients
2 Tbsp coconut oil

1 large onion, diced

3 cloves garlic, minced

1 Tbsp fresh ginger, grated

2 medium sweet potatoes, peeled and diced

1 cup dried red lentils, rinsed

4 cups vegetable broth

1 (14 oz) can coconut milk

2 cups chopped kale leaves (or spinach)

Salt and pepper, to taste

Optional toppings: chopped cilantro, lime wedges, toasted coconut flakes
