Roughly chop the shrimp into small pieces — you want some texture, so avoid pureeing it into a paste.
2️⃣ Make the Shrimp Mixture
In a large bowl, combine the chopped shrimp, breadcrumbs, parsley, minced garlic, egg, mayonnaise, Dijon mustard, lemon zest, and lemon juice.
Season with salt and pepper to taste.
Mix everything gently but thoroughly until the mixture holds together. (If it's too wet, add a little more breadcrumbs.)
3️⃣ Form the Cakes
With your hands, shape the mixture into small patties, about 2–3 inches wide. You should get 8–10 shrimp cakes depending on size.
4️⃣ Cook the Cakes
Heat a drizzle of olive oil in a large skillet over medium heat.
Cook the shrimp cakes for about 3–4 minutes per side, until golden brown and fully cooked through.
5️⃣ Serve
Serve warm with extra lemon wedges, a simple side salad, or a dipping sauce like garlic aioli, spicy mayo, or tzatziki!
