Activate the Yeast: In a large bowl, combine warm water and sugar. Stir in the yeast and let it sit for about 5–10 minutes until it becomes frothy.
Mix the Dough: Add the flour and salt to the yeast mixture. Stir with a spatula or wooden spoon until a sticky dough forms.
Add Olive Oil: Drizzle in the olive oil and mix again to incorporate fully. The dough will still be sticky — that's exactly what you want.
First Rise: Cover the bowl with plastic wrap or a clean kitchen towel. Let the dough rise in a warm place for about 1–1.5 hours, or until doubled in size.
Prepare for Baking: Lightly grease your mold or loaf pan with a bit of olive oil. Transfer the risen dough into the mold, gently spreading it out without punching it down.
Second Rise: Cover again and let it rise for another 30 minutes.
Bake: Preheat your oven to 350°F (175°C). Bake the bread for 25–30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
Cool: Remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
