Preheat your oven to 350°F (175°C). Grease a small loaf pan or line it with parchment paper.
Prepare Wet Ingredients:
In a large bowl, whisk together the eggs, melted butter, almond milk, and honey (if using) until smooth.
Mix Dry Ingredients:
In a separate bowl, sift together the coconut flour, baking powder, and salt.
Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet ingredients, stirring until a thick batter forms. Coconut flour absorbs liquid quickly, so let the batter sit for a few minutes to thicken further.
Bake:
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake for 30-35 minutes, or until a toothpick inserted into the center of the bread comes out clean.
Cool:
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Slice and Serve:
Once cooled, slice the bread and serve as desired. It’s perfect with butter, jam, or used for sandwiches.
