Easy Cheesy Homemade Pizza Pockets

In a large bowl, combine warm water, sugar, and yeast. Stir gently and let it sit for 5–10 minutes until the mixture becomes frothy.

Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.

Knead the dough on a floured surface for about 5–7 minutes until smooth and elastic.

Place the dough in a lightly oiled bowl, cover with a damp towel, and let it rise in a warm place for 1 hour, or until it doubles in size.

2. Prepare the Filling:
While the dough is rising, mix together the mozzarella cheese, pizza sauce, oregano, garlic powder, and any additional toppings like pepperoni (if using).

3. Assemble the Pizza Pockets:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Once the dough has risen, punch it down and divide it into 8 equal pieces.

Roll each piece into a small circle (about 4–5 inches in diameter).

Place a spoonful of the cheese filling in the center of each dough circle, leaving a small border around the edges.

Fold the dough over the filling to form a half-moon shape and press the edges to seal tightly.

4. Bake:
Arrange the pizza pockets on the prepared baking sheet.

(Optional) Brush the tops of the pockets with melted butter for a golden finish.

Bake in the preheated oven for 12–15 minutes, or until the pockets are golden brown and crispy.
