Preheat your oven to 400°F (200°C) and grease a baking sheet to prevent the potato bombs from sticking.
Boil the Potatoes:
In a large pot, boil the diced potatoes until they are tender (about 10-12 minutes). Drain and mash them in a bowl until smooth.
Mix the Filling:
Stir in the shredded cheddar cheese, grated Parmesan cheese, and chopped parsley. Season with salt and pepper to taste and mix until fully combined.
Shape the Potato Balls:
Using your hands, shape the mashed potato mixture into small balls and place them on the prepared baking sheet.
Prepare the Garlic Butter:
In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
Brush with Garlic Butter:
Brush the garlic butter mixture generously over each potato ball, making sure to coat them evenly.
Bake:
Bake the potato bombs in the preheated oven for 20-25 minutes or until they are golden brown and crispy on the outside.
