Boil the tortellini according to package instructions until al dente. Drain and set aside.
Sear Filet Bites:
In a hot skillet, add a bit of oil and sear the filet mignon cubes until golden brown on each side, leaving the inside medium-rare. Remove from the skillet and set aside.
Make the Garlic Butter Sauce:
In the same skillet, lower the heat and add butter and minced garlic. Stir until the garlic is fragrant. Then, pour in the heavy cream and let it simmer for a few minutes, allowing the sauce to thicken slightly.
Combine & Serve:
Add the cooked tortellini to the sauce and toss gently to coat. Plate the dish by placing the filet bites on top of the tortellini or alongside. Garnish with freshly chopped parsley and, if desired, a few cherry tomatoes for an extra pop of color.
