If using fresh crab meat, carefully remove any shells and shred the meat into bite-sized pieces. If using imitation crab meat, shred it into pieces.

Chop the Vegetables:

Finely chop the celery, red onion, bell pepper, and parsley.

Make the Dressing:

In a bowl, mix the mayonnaise, lemon juice, Dijon mustard (if using), Old Bay seasoning (if using), salt, and pepper until smooth and well-combined.

Combine the Ingredients:

In a large bowl, combine the crab meat, chopped vegetables, and fresh parsley. Add the dressing and gently toss everything together until well-coated. Adjust the seasoning with more salt, pepper, or lemon juice to taste.

Serve:

Serve the crab salad chilled over a bed of fresh lettuce leaves, or serve in individual bowls as a light main or side dish.
