Chicken Sausage & Roasted Veggie Bowl

Roast the Sweet Potatoes & Broccoli: Preheat the oven to 400°F (200°C). Toss the sweet potatoes and broccoli with 1 tablespoon of olive oil, salt, pepper, and smoked paprika. Spread them out on a baking sheet and roast for 20-25 minutes, flipping halfway through.

Sauté the Sausage & Zucchini: While the veggies roast, heat the remaining 1 tablespoon of olive oil in a pan over medium heat. Add the sliced chicken sausage and cook for about 5 minutes until browned. Add the zucchini and garlic powder, and sauté for another 4-5 minutes until tender.

Combine & Toss: In a large bowl, mix the roasted sweet potatoes and broccoli with the sautéed sausage and zucchini. Sprinkle sesame seeds on top for added crunch.

Serve & Enjoy: Plate the dish while warm, and drizzle with honey mustard or your favorite creamy dressing if desired.
