Ingredients:
For the Chicken:
1 lb boneless, skinless chicken breast, cut into bite-sized pieces
1/2 cup buttermilk (or regular milk with 1/2 tbsp vinegar as a substitute)
1/2 cup cornstarch
Salt and black pepper to taste
Vegetable oil, for frying
For the Bang Bang Sauce:
1/4 cup mayonnaise
2 tbsp sweet chili sauce
1 tbsp sriracha (adjust to taste for spice)
1 tbsp honey or sugar (optional, for extra sweetness)
For Garnish:
Chopped green onions
Sesame seeds (optional)
How to Make:
Marinate the Chicken:
In a bowl, combine chicken pieces with buttermilk, salt, and pepper. Let it sit for at least 15 minutes to allow the chicken to become tender and juicy.
Prepare the Bang Bang Sauce:
In a small bowl, mix mayonnaise, sweet chili sauce, sriracha, and honey (if using) until smooth and well-combined. Set aside for later use.
Coat and Fry the Chicken:
Heat about an inch of vegetable oil in a deep skillet over medium-high heat.
Remove chicken pieces from the buttermilk, letting the excess drip off, then coat them in cornstarch until evenly covered.
Carefully add the chicken pieces to the hot oil, frying in batches to avoid overcrowding. Fry for 3-4 minutes per side, until golden brown and crispy. Drain on paper towels.
Toss in Sauce:
Place the fried chicken into a large bowl. Pour the prepared Bang Bang sauce over the chicken and gently toss until the chicken is evenly coated with the sauce.
Serve:
Garnish with chopped green onions and sesame seeds, if desired. Serve hot with rice, noodles, or on its own as an appetizer.
