Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Grind the oats and almonds in a blender or food processor until they turn into a coarse meal.
Mix the oat-almond meal with baking powder, cinnamon, and a pinch of salt in a bowl.
Add the milk, honey (or maple syrup), and vanilla extract to the dry ingredients. Stir to form a thick batter.
Dip each apple ring into the batter, coating both sides.
Place the coated apple rings onto the prepared baking sheet.
Bake for 20–25 minutes until golden and set.
Cool slightly and enjoy warm!
