Zucchini and Oatmeal Bake

Prepare the Zucchini: Grate the zucchini and place it in a clean towel or cheesecloth. Squeeze out the excess moisture to prevent the bake from becoming too watery.

Mix Wet Ingredients: In a medium-sized bowl, whisk together the milk, eggs (or flax eggs), maple syrup (or honey), and vanilla extract.

Add Dry Ingredients: Stir in the oats, grated zucchini, and cinnamon until everything is well combined.

Bake: Pour the mixture into a greased 8x8-inch baking dish. Spread it evenly and smooth the top.

Bake at 350°F (175°C) for 35-40 minutes, or until the top is golden brown and the oats are set. A toothpick inserted should come out clean.
