Vegetable and Mozzarella Bake Recipe

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil or cooking spray.

Prepare the Vegetables:

Chop your vegetables into bite-sized pieces. You can use a mix of any veggies you have on hand, such as zucchini, bell peppers, onions, or tomatoes.

Sauté the vegetables in 1 tbsp olive oil in a pan over medium heat for about 5-7 minutes until they're tender. Set them aside to cool slightly.

Mix the Batter:

In a large bowl, whisk together the eggs, 2 tbsp olive oil, salt, flour, and baking powder until smooth. You can also add a pinch of freshly ground pepper and dried oregano for extra flavor.
