Pumpkin and Cottage Cheese Casserole

Peel the pumpkin, remove the seeds, and dice it into small cubes.
Boil or steam the pumpkin pieces until they are soft and easily mashable, about 10-15 minutes.

Mash the Pumpkin:
Once the pumpkin is soft, mash it with a fork or potato masher until smooth.

Mix the Ingredients:
In a bowl, combine the mashed pumpkin, cottage cheese, and the egg. Mix everything together until well combined.

Bake the Casserole:
Preheat your oven to 350°F (175°C). Transfer the mixture into a lightly greased casserole dish. Smooth the top with a spatula.

Bake:
Place the casserole in the oven and bake for 25-30 minutes, or until the top is golden brown and the casserole is firm.
