Cook the Sausages:
Heat the olive oil in a large skillet over medium heat. Add the sausage slices and cook until golden brown (about 4-5 minutes). Remove from the pan and set aside.
Sauté the Vegetables:
In the same skillet, add the chopped onions and cook for about 2 minutes. Then, add the zucchini and cook for another 3-4 minutes until the vegetables are just tender. Season with Italian seasoning, smoked paprika, salt, and pepper.
Cook the Shrimp:
Add the minced garlic and prawns to the pan. Cook for 2-3 minutes, until the shrimp turn pink and opaque. Add the sausages back into the pan, mix everything together, and heat through for another minute.
Serve:
Serve the mixture hot directly onto plates, or over rice, quinoa, or cauliflower rice for a low-carb option.
