No Sugar, No Flour Energy Bars – Just Pure Goodness!

Gently melt the chocolate and coconut oil (or peanut butter) over low heat in a saucepan. Stir until smooth and fully melted.

2. Add Dry Ingredients
Add the rolled oats, whole peanuts, vanilla extract, salt, and honey or maple syrup (if using) into the melted mixture. Stir well until everything is evenly coated in chocolate.

3. Mold and Press
Pour the mixture into a baking dish lined with parchment paper. Use a spatula to firmly press down the mixture, smoothing out the surface.

4. Prepare the Optional Caramel Drizzle
In a small saucepan, gently heat all the caramel drizzle ingredients. Let simmer for 5–7 minutes on low heat until it thickens slightly. Pour over the chocolate mixture if desired.

5. Chill
Place the dish in the refrigerator for at least 2 hours or in the freezer for 30–45 minutes until firm.

6. Slice
Remove from the mold and cut into even bars. Store in the refrigerator to keep them firm and fresh.
