Activate the Yeast: In a large mixing bowl, combine the warm water and sugar. Sprinkle the yeast over the top and stir gently. Let it sit for 5-10 minutes until it becomes frothy.

Make the Dough: Add the oil and flour to the yeast mixture. Mix with a wooden spoon until the dough begins to come together.

Knead the Dough: Transfer the dough to a floured surface and knead for about 5-7 minutes, or until smooth and elastic.

Let it Rise: Place the dough in an oiled bowl and cover with a clean cloth. Let it rise in a warm place for 1 hour or until it has doubled in size.

Preheat Oven: While the dough is rising, preheat your oven to 475°F (245°C).

For the Sauce:

Prepare the Sauce: In a small saucepan, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.

Add the Tomato Sauce: Stir in the tomato sauce, oregano, basil, salt, and pepper. Simmer on low heat for 5-10 minutes to let the flavors combine. Remove from heat and set aside.

Assembling the Mini Pizzas:

Shape the Dough: Once the dough has risen, punch it down and divide it into 8-10 equal portions. Roll each portion into a ball and flatten it into a small pizza crust on a floured surface.

Top the Pizzas: Place the mini pizza doughs on a baking sheet lined with parchment paper. Spread a thin layer of the homemade tomato sauce on each pizza. Top with mozzarella cheese and your favorite toppings.

Bake: Bake the mini pizzas in the preheated oven for 10-12 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
