Ingredients:
3 cups strawberries, diced
1 cup granulated sugar
2 tablespoons lemon juice
1/4 teaspoon vanilla extract
Directions:
Combine strawberries, sugar, lemon juice, and vanilla in a saucepan and bring to a boil.
Reduce heat to a simmer and cook until the strawberries soften and the syrup thickens (about 15 minutes).
If desired, strain the syrup through a fine mesh strainer for a smooth consistency.
Allow to cool and store in an airtight container in the refrigerator.
This strawberry syrup is perfect for pancakes, yogurt, or as a topping for desserts.
