Simmer the Ginger: In a saucepan, combine the ground ginger and mineral water. Bring it to a boil, then reduce the heat and simmer for 10 minutes.
Strain the Mixture: Remove the saucepan from heat and strain the ginger mixture through a fine mesh sieve or cheesecloth into a large bowl to remove the solid ginger pieces.
Sweeten the Ginger Liquid: Add the sugar (or honey) to the ginger liquid, stirring until dissolved. Adjust the sweetness to your liking.
Cool the Ginger Beer: Let the ginger mixture cool to room temperature.
Add Sparkling Water and Lemon: Once cooled, stir in the sparkling water and a few drops of lemon juice to give it a refreshing tang.
Refrigerate: Transfer the ginger beer to a clean, airtight container and refrigerate for at least 4 hours, or until chilled.
Serve and Garnish: Serve the ginger beer over ice and garnish with lemon slices.
