Prepare the Produce:
Shred the cabbage finely, grate the carrots, and julienne or grate the apple. Place them all in a large mixing bowl.
Make the Dressing:
In a small bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, and honey. Season with salt and pepper to taste. Add a little lemon juice if using.
Combine:
Pour the dressing over the cabbage mixture and toss until evenly coated. Taste and adjust seasoning if needed.
Chill or Serve Immediately:
Let the coleslaw sit for 10–15 minutes for flavors to blend, or refrigerate for up to 2 hours before serving.
