Preheat your oven: Set the temperature to 375°F (190°C) and grease a baking dish or a cast iron skillet.
Cook the potatoes: In a large pot, boil the potato cubes in salted water for about 10-12 minutes, or until they are tender when pierced with a fork. Drain and set aside.
Mix the cheesy goodness: In a large bowl, combine the cooked potatoes, sour cream, melted butter, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Gently mash the potatoes, leaving some chunks for texture.
Add the cheese and bacon: Stir in half of the shredded cheddar and mozzarella cheese, along with the crumbled bacon. Make sure the mixture is well combined.
Bake to perfection: Transfer the potato mixture into your greased baking dish and spread it out evenly. Top with the remaining cheese.
Crisp it up: Place the baking dish in the oven and bake for 15-20 minutes, or until the cheese is melted and bubbly with golden, crispy edges.
Garnish and serve: Once out of the oven, sprinkle with freshly chopped parsley or chives for a pop of color and freshness.
