Cheesy Carrot Breakfast Fritters Kids Love

Prepare the veggies: In a small bowl, combine the chopped onion and grated carrot.

Mix the batter: Add the egg, flour, and Parmesan cheese to the veggies. Stir until everything is well combined. Add a pinch of salt and pepper if desired.

Heat the pan: In a non-stick skillet, heat a little olive oil over medium heat.

Cook the fritters: Spoon the mixture into the pan in small rounds. Flatten gently with a spatula. Fry for 2–3 minutes on each side or until golden brown and crispy.

Serve warm: Remove from the pan and place on a paper towel to absorb excess oil. Serve immediately.
