Boil the cubed potatoes in salted water for 12-15 minutes, or until they’re tender and easily pierced with a fork. Drain the potatoes and return them to the pot.
Prepare the Bacon and Sausage:
While the potatoes cook, heat a skillet over medium heat and cook the chopped bacon until crispy, about 5-7 minutes. Remove and set aside.
In the same skillet, crumble and cook the sausage, breaking it apart as it cooks, until browned and fully cooked. Remove from heat and set aside.
Mash the Potatoes:
Mash the potatoes with butter, sour cream, and milk until smooth and creamy. Season with salt and pepper to taste.
Combine Ingredients:
Fold the cooked bacon, sausage, chopped onion, and shredded cheddar cheese into the mashed potatoes. Stir until everything is evenly mixed.
Form the Loaf:
Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
Spoon the potato mixture into the loaf pan, spreading it out evenly. If using breadcrumbs, sprinkle them over the top for a crispy finish.
Bake:
Bake for 20-25 minutes, or until the top is golden brown and the cheese is melted and bubbly.
Garnish and Serve:
Let the loaf cool for a few minutes, then remove it from the pan and transfer to a serving platter. Garnish with fresh parsley before serving.
